Pinch the young plants to encourage bushiness, and dont let them set flower buds until you are ready to harvest the coriander seeds. When this happens, the plant will sport 2- to 4-inch pale cream flowerheads, which eventually set seed. The heads can be cut and then dried to harvest the seeds as coriander for use in Oriental dishes, curries, and more.Cilantro is not fussy about soil, though it prefers fertile, well-drained garden soil receiving full sun. A very quick grower, it can be sown in 2- to 3-week intervals in late spring and early summer for season-long harvests, and again in late summer or early fall if you live in a warm climate.
